Our Texas Steak Warehouse Review

Certified Hereford USDA Choice T-Bone 20 oz. - $27 

The Hereford T-Bone was our first-ever steak from the Texas Steak Warehouse and our introduction to Hereford cattle. Both went very well, thank you. T-Bone is not our favorite steak, and when we think of them, we think of the Omaha King Cut T-Bone. If we are not in the mood to spend $90 on a steak, then we are inclined to opt for a Porterhouse over a T-Bone, but there something about the Hereford beef flavor that deserves some further study.

We cooked the steak under our broiler, instead of on the grill, which is how we got that beautiful and delicious crust. A couple minutes on each side given the thickness of the steak, was all that was needed, as was a 15 minute rest to the inside finish to a perfect medium rare. The texture of the steak is great, as is the flavor, but it's the juice that swirls around your mouth as you chew the meat, like a fine French wine and cheese pairing, that made our meal quite exceptional. To overcook this steak and lose the juices would be a sin, and could potentially alter your Hereford dining future. Tune for more reports as we have more steaks on the Texas Steak Warehouse menu.

Certified Hereford USDA Choice Top Sirloin - 16 oz - $17 

This is nothing short of a fantastic steak and worth the money. Most Top Sirloins come about half of this size, so we felt this was a treat and a complete meal. For a USDA Choice piece of beef, we felt the flavor was far superior to many others we've tried. This steak has become one of our favorites for taste, tenderness, and value. This Top Sirloin ranks in our top 3.

We did nothing but season it with salt and pepper, pas-sear it for a nice crust and finished it off in the oven until it cooked to medium rare. After a nice rest, our guests all plated up and dug in. There was silence for a good three minutes as everyone around the table savored their first bites, then compliments to the chef were shared by all in attendance. 

Of course, Texas Steak Warehouse had more to do with that than I did preparing these hearty gems. They come with our highest recommendation.

Metro USDA Choice Center Cut Filet Mignon 8 oz - $13

We had our first introductions to Hereford beef, and we thought it was very good, but this Metro Filet Mignon stole the show for the Texas Steak Warehouse. Our were expertly trimmed barrel cuts that seemed much bigger than the 8 oz. package they came in. All we did was add salt and pepper, pan-sear the outside, and let it finish in the oven until the inside was 112 degrees. It came up to 128 degrees during the 15 minutes rest period.

At $13 it is not unrealistic to serve two of these beauties for those with larger appetites. It was one of the most juiciest steaks we have had, paired with melt in your mouth tenderness, and a perfect crust. The website describes them as a steak for a special occasion with an everyday price, and that might be exactly how you could define these steaks.

An important note, these Filet Mignon are "center cut" meaning they are harvested from the most prized part of the tenderloin. There are other cuts, usually from the ends, that may be a little cheaper but not have near the value these steaks do. Given the outstanding price and taste, we highly recommend them.
Our Conclusion

All the beef at the Texas Steak Warehouse is USDA Choice Certified Hereford Beef, which is interesting these days to find a company that doesn't offer the more expensive USDA Prime or less expensive brands of cattle to its clients. What made it interesting to me is how they described their process in making this business decision: 

They are the best tasting steaks we've tried.

Now I'm sure people in Texas, who also happen to be in the steak-selling business have tasted a lot of different steaks in their lifetime. If they say USDA Choice Certified Hereford Beef is the best tasting steak they have tried, I'll take that like I would accept a bank check.

I am not ready to say it is the best tasting steak I have tried, but if you combine USDA Choice, a Certified brand of cattle, and a generally cuts larger than most, you get the makings of a recipe for value. Good value to match the pretty damn good steaks we've had so far.

By the way, spend $100 there, and you get 5% off. Spend $200, and you get $10% off. It's a standing discount no matter what you buy, even if the item is on sale.
